CARROT PUDDING

Makes 4 serves.

A deliciously sweet, creamy dessert reminiscent of Gajar ka Halwa. Learn more about Halwas here. Simple and quick to make, it’s dairy free, refined sugar free & has a blend of spices that are warming even though this is a cold dessert.


INGREDIENTS

2.5 cups grated carrot

1/2 cup soy milk

1/2 cup cashews

10 dried dates

1 tbsp crushed ginger

1 tsp vanilla essence

1 tsp cinnamon

1/2 tsp cardamom

To serve (optional but does make it look prettier):

  • Desiccated coconut

  • Raw cacao nibs

  • Sliced dried fig

METHOD 

  1. Place all ingredients in a blender and blend until ‘chunky’ smooth.

  2. Divide evenly between serving bowls.

  3. Use a selection of toppings you like to make it look pretty.
